Tasting note

Pata Negra Reserva Ribera is a wine with an intense red cherry color of great depth.
The nose is clean. Notes of wild berries and hints of vanilla and roasts in from well-structured wood can be perceived.
The palate is round, silky, broad, with a fruity aftertaste and sweet, elegant and persistent tannins.

Winemaking

To produce this wine we have chosen the best plots on our vineyard. Once optimal ripeness is reached, harvesting is done by keeping the grapes in tanks for 48 hours of pre-fermentation maceration at a temperature of 10°C. Maceration lasts for 25 days, thereby achieving the grapes’ full potential.
The wine is aged in American and French oak for 24 months and late for another 12 months in bottle.

Tasting note

Appearance: Attractive cherry red of high intensity, tremendous depth, with beautiful violet trim suggesting high potential for further evolution in bottle.
Nose: Suggestive fruity aromas, with hints of wild red and black fruit, with a vanilla base and sweet notes due to aging in barrel, full of elegance. Mature on the palate, full of nuances with a pitch of intense palate.
Palate: Its finish shows the richness of ripe tannins that leave an elegant and long aftertaste.

Winemaking

After careful selection of the plots whose fruit will be used in the coupage of this wine, grapes are harvested at their optimum ripeness and undergo careful alcohol fermentation in temperature-controlled tanks with a long maceration of the skins to obtain the their maximum aromatic strength and concentration.
The wine’s subsequent aging in French oak barrels for 12 months and in bottle for another 12 months result in its refining and balancing before being sent to market.

Pairing

This wine is recommended to accompany fine cuts of beef, cheese and small game.
Serve at 16° to 18°C. We recommend uncorking or decanting for a while prior to tasting to fully appreciate its virtues.

Nose: Clearly fruity, with an intense nose of red berries. Perfectly reflects the varietal from which it comes: Fine tint, perfectly harmonized with a spicy touch from French oak.
Palate: On the palate it is fresh, balanced, fruity, with a perfect balance between acidity, body and tannins. Good persistence.

Winemaking

After careful selection of the grapes, they are harvested at their optimum ripeness. We develop the wine to extract the full aromatic potential of the varietal, keeping the grapes in tanks for 48 hours of pre-fermentation maceration at a temperature of 10°C. Later we perform alcoholic fermentation at a low temperature with a maceration of 12 days, preserving the full aromatic strength of the varietal, befitting for a high-quality young roble wine. The wine’s subsequent 6 months in French oak barrels completes its fine tuning.

This wine goes perfectly with all kinds of well-seasoned meats and stews.
We recommend serving between 15º and 16º.

Tasting note

This Pata Negra Gran Reserve is red wine with an intense red color with light terracotta hues. The nose presents aromas of aging which are complemented by the characteristic aromas of the varietal, which are not fruity but have evolved to produce more complex spice and dairy aromas. It is a well-structured wine, very agreeable, enveloping, with a long finish.

Winemaking

This Pata Negra Gran Reserve is obtained from selected grapes. It is fermented at a controlled temperature around 25-30ºC and maceration with the skins for around twenty days to obtain the structure and color of a wine designed to be stored for five years. After malolactic fermentation the wine is placed in American and French oak barrels where it remains for 18 months. After this time the wine is bottled and stored for aging in bottle.

Pairing

We recommend serving this Pata Negra Gran Reserve from the Valdepeñas Designation of Origin at temperatures between 16º and 18ºC.

Senorio de los Llanos Crianza

This Valdepeñas D.O. red is a very light, agreeable wine, which can be enjoyed as an aperitif.

Tasting note

This Señorío de los Llanos Crianza has an intense red color with terracotta hues. The nose features aromas of aging.

Winemaking

Selected grapes, fermented at a controlled temperature around 25 to 28°C and macerated with the skins for roughly eight days, giving the wine a good tannic structure. After malolactic fermentation the wine is placed in American oak barrels where it remains for six months. After this time the wine is bottled and stored for aging in bottle for three more months.

Pairing

We recommend serving this Señorío de los Llanos Crianza between 14º and 16ºC.
This Valdepeñas D.O. red is a very light, agreeable wine, which can be enjoyed as an aperitif.

Mayor Castilla Oak

Tasting note
Mayor de Castilla Reserva is a Ribera del Duero wine with a ruby color and light earthen hues, clean and silky.
Great combination of primary and aged aromas. Light touches of leather and ripe berries. Balanced feel, slightly balsamic and round, it has an undoubtedly a long term of positive evolution.
Winemaking
The grapes used to make this roble wine come from our own vineyards or selected plots owned by farmers with whom we maintain close contact throughout the year. The harvest is late, carried out around the second week of October in order to achieve a high concentration of polyphenols and a good extract. Nonetheless, green pruning helps regulate the desired concentration on each vine. This objective is easily achieved, as the average yield of the vineyard rarely exceeds 5,000 kg/hectare. The maceration of Mayor de Castilla Roble is long, from 25 to 30 days, with gentle pumping of air in its final phase. Once devatted and lightly pressed, it is decanted into barrels for malolactic fermentation. The wine is aged in barrel for 190 days, alternating between oaks of different origins. To complete the process the wine is kept in bottle at the winery, allowing us to achieve the exceptional quality of Mayor de Castilla Roble, which will maintain its finest expression and be enhanced for years to come.

We recommend serving this Mayor de Castilla Toro between 14 and 14ºC.
Mayor de Castilla Roble Red is a Toro that goes well with pasta, legumes, cured meat, cold cuts and grilled meat.

Tasting note
Color: Intense cherry red, plenty of depth. Shows purple trim, without evolution. Nose: Superb, intense, clearly varietal, red and black berries, balsamic notes characteristic of the varietal (menthol), elegant spiced tones, aromas of chocolate and toffee. Complex, elegant and intense nose. Palate: The palate states why the nose presents to us, a complex wine, long and very persistent. Quite elegant, this is a very balanced, polished wine with “round” tannins, strong perception of fruit. Persistent and complex aftertaste
Winemaking
Tinta de Toro is a grape adapted to the harsh climatic conditions of Toro and its poor soil, developing thick skins that give us very structured wines. The bunches are fermented in stainless steel tanks at a maximum temperature of 28°C and with a short maceration with the skins to achieve a smooth wine. The wine then undergoes malolactic fermentation and is decanted into selected oak barrels for 4 months, providing it with finesse and rounding out its tannins.
Pairing
We recommend serving this Pata Negra Toro at a temperature of 16°C.
Ideal for barbecues, red meat, Mexican and Italian food.
