This Pata Negra Organic Cava has an intense bubble, small size, vertical and regular release, forming a crown.

Tasting note

This Pata Negra Organic Cava has a good aromatic intensitv, fresh, retaining fruity notes characteristic of this varietal. It also has a good structure on the palate, full bodied, broad, lively and silky. Clean and persistent retrnasal sensations. An intense bubble, small size, vertical and regular release, forming a crown.

Winemaking
To produce this cava we choose the best white wines made from Macabeo, Parellada and Xarel-lo grapes and, after adding sugar and selected yeasts, it undergoes a second fermentation in bottle (traditional method) in our cellars at a temperature never exceeding 16°C to obtain small and persistent bubbles. The bottles remain in our cellars in total darkness and silence for a minimum of 9 months.
Pairing
We recommend serving very cold, between 4 and 6°C.
This cava is ideal to accompany as an aperitif as well as with smoked dishes, curries, spicy dishes and all kinds of desserts.

OP Chardonnay

Opera Prima Chardonnay

This Chardonnay from the Mancha Designation of Origin pairs especially well with seafood, fish, rice and fresh or semi-cured cheese.

Tasting note

Chardonnay of a clean and bright color with attractive tonality.

Fresh scent on the nose with a complex compendium of tropical fruits. On the palate it is tasty with well-balanced acidity and hints of the sensations obtained in the olfactory phase.

Winemaking
To obtain this white wine, Chardonnay grapes are selected before entering the winery. The must is obtained without pressure after a cold maceration at 10°C in stainless steel tanks. It is clarified and fermented at 16°C in stainless steel tanks with selected yeasts.
Once fermentation is complete, the wine is decanted to separate it from the lees and undergoes several days at negative temperatures to stabilize it without losing its freshness until the moment of bottling.
Pairing
We recommend serving this Opera Prima Cabernet at a temperature between 4ºC and 6º C. This Chardonnay from the Mancha Designation of Origin pairs especially well with seafood, fish, rice and fresh or semi-cured cheese.

With the intention of developing a young and very fresh wine we set the harvest date based on the most ideal characteristics for the development of a young wine, and on our vines we find the ideal acidity and sugar balance.

Before beginning fermentation the already ground grape is kept at 10°C for 48 hours in order to extract, in the absence of alcohol, the terpene components producing the characteristic aromas of this varietal (wile red and black fruits and berries) as well as the anthocyanins responsible for its bluish and deep red colors.

The alcoholic fermentation takes place with oxygenated maceration below 25°C in order to preserve the aromatic potential. Once it is fermented, two thirds of the sugar is devatted, cooling the wine must to 20ºC, the temperature at which the alcoholic fermentation completes and malolactic fermentation occurs.
After light clarification and subsequent decanting it is stabilized at negative temperatures and bottled

A wine to enjoy by the glass or with an aperitif.

Best served at 14- 16 degrees.

Tasting note

This Opera Prima Merlot is a very attractive wine in the visual phase because of its purple hue, with high intensity.

Balsamic, clean and crisp aroma, characteristic of the varietal, blended with black fruit. The palate presents a velvety meeting, well balanced with a young character and noted for the acidity present in the wine.

Winemaking

With the intention of developing a young and very fresh wine we set the harvest date based on the most ideal characteristics for the development of a young wine, and on our vines we find the ideal acidity and sugar balance.

Before beginning fermentation the already ground grape is kept at 10°C for 48 hours in order to extract, in the absence of alcohol, the terpene components producing the characteristic aromas of this varietal as well as the anthocyanins responsible for its bluish and deep red colors.

The alcoholic fermentation takes place with oxygenated maceration below 25°C in order to preserve the aromatic potential. Delestage is done to force the extraction of polyphenols and accentuate the varietal character at the end of fermentation and it is then devatted, cooling the wine must to 20ºC to perform a slow malolactic fermentation.
After light clarification and subsequent decanting it is stabilized at negative temperatures and bottled

Winemaking

Don Simon Sangria is all natural. Made from 100% fruit. The major component in our sangria is wine made from Spain’s noble grape, Tempranillo. Blended with sugar, citrus and natural fruit extracts to provide a sweet, fruity balance.

OP Tempranillo

Tasting note

This Opera Prima Tempranillo has an attractive ruby red color that’s bright and clean with the bluish trim of its youth.

The nose presents intense fruity aromas characteristic of the varietal, red and black berries: blueberries, blackberries, strawberries, raspberries, currants and interesting floral aromas such as violets and roses.

The palate confirms the explosion of aromas of red and black berries, reappearing in the finish those initial aromas found in the nose.

Castillo San Simon Chardonnay

Tasting note

This wine has a beautiful pale gold color. There are lovely tropical notes of ripe mango and pineapple, peach. It tastes fruity on the palate, subtle sweet and refreshing finish.

Winemaking
For this white wine, we obtain the must by straining, without any pressure, and they undergo static racking. Once they are perfectly clean they are fermented at a temperature of 18ºC. Next they are decanted and conditioned to maintain their freshness until proceeding to bottling.
Pairing

A wine to enjoy by the glass or with an aperitif. Nice with most  fish dishes, salads, grilled or steamed vegetables, as well as nuts and olives.

Best served at 8ºC.

Tasting note

This wine has a very deep black cherry color. The taste is bold, very tasty, luscious, with round sweet tannins and a long lasting finish. With an intense smell and complex aromas of black and stone fruits, with appealing coffe hints

Winemaking

This wine is made exclusively from previously selected Syrah, Cabernet Sauvignon and Petit Verdot grapes.
The fermentation process is carried out in stainless steel tanks under strict temperature control. The maceration of the must and the skins lasts until the end of alcoholic fermentation in order to achieve maximum polyphenol extraction. During this time, the must is pumped periodically to facilitate extraction. The newly fermented wine is decanted and remains at rest until completing malolactic fermentation. After processing this wine is kept for six months in stainless steel tanks and later in American oak barrels for another 6 months.

Pairing

Pairing: great with barbecues, all red meat, as well as on its own. Try it with a piece of black chocolate…
Best served at 16-18ºC.
